    311(16 oz Four Pack)

    311 is our take on the classic American Amber Ale. This style, and it’s cousin the Amber Lager, are what turned many of us on to craft beer in the first place. When done right, Amber Ales are a great balance of malt complexity and hop flavor. This style is great for those that don’t just want a ‘boring’ light beer, they also don’t want an IPA. They want a slightly sweet and full Amber ale.

    Bruce(16 oz Four Pack)

    Bruce is the yin to Carl’s yang. These beers are two sides of the same delicious coin. He is dark and roasty, yet surprisingly drinkable, while Carl is light, fresh and crisp. Dark Kolsch is not technically a style, but we made it one. This beer resembles a German schwarzbier, or black lager. We use our house kolsch yeast, ferment this slow and low and cold, and out comes a smooth, toasty and slightly roasty porch sipper.

    Chico(16 oz Four Pack)

    Chico Pale Ale is one of our year-round beers. This beer is named after Chico, California, home of Sierra Nevada and the OG American Pale Ale. Compared to the OG, Chico is more bitter and hop forward. Think of Chico as a modern version of the OG. Chico is hoppy, grapefruity, refreshing, and assertively bitter for a Pale Ale.

    Crosby(16 oz Four Pack)

    Crosby is our annual Fresh Hop IPA that was brewed with 60 pounds of Freshly picked Strata hops from Crosby Hop Farm. Within 24 hours, these hops were picked in Oregon, shipped overnight, and thrown in to this beer! This beer exudes freshness. It tastes just like the hops coming right off the bine. Fresh Hops are only available at harvest, so this seasonal is truly a seasonal beer.

    Dad(16 oz Four Pack)

    Dad is our American Pilsner. This beer is brewed to taste like the beer your Dad gave you sips of as a toddler, or teenager, or whatever… Your Dad drank Sierra Nevada and Guiness? Well consider yourself #blessed. Most of our dads drank Lone Star. We model this brew after Coors Original, the Banquet Beer. This year’s Dad was brewed with Weyermann Pilsner Malt and Corn. Very little hops were used. We fermented it with Pilsen Lager yeast for two weeks and lagered it in our Lager Vessel for about four weeks. We polished him off with our filter to make sure Dad looks and tastes as crisp as a TWO DOLLAR BILL.

    Lil Guy(16 oz Four Pack)

    Life is more fun with a Buddy. So, we’re excited for this Sport to join the ranks. Sometimes you just wanna kick back with a good ole drinking beer, a beer that’s best consumed in gulp format, aka a ‘Gulper’. *Lil Guy pairs best with another Lil Guy.

    Maturon(16 oz Four Pack)

    Maturon, aka Tre Miner, is a collaboration with Jester King Brewery. Tre has graced both breweries as an employee, and we are very thankful that he allowed us to use his badass name for this brew. We spent a good amount of time going back and forth with the brewers at Jester King about what type of beer we would brew together. I really feel that Maturon is a balanced combination of both brewing styles. We used foraged ingredients from the JK farm, Texas grain, Texas malt, smoked malt, yet brewed with clean fermenting German Lager yeast. All of the different ingredients come together in a balanced, drinkable, yet thought-provoking smoked lager.

    Schlagen (16 oz Four Pack)

    Schlagen is our German – Oktoberfest or Marzen – a rich, amber lager, aged with lightly toasted French Oak. The concept behind this beer was to create something similar to what a traditional Marzen would’ve tasted like when all lager was fermented and aged in oak barrels or Foudres. All of the original lager would’ve been stored in wood, underground for a long period of time. We recreated this idea by using lightly toasted French Oak spirals in the fermentation and then in the brite/storage tank. The result is a rich, smooth lager that carries strong caramel, coconut, vanilla, and even leather character.

    Slater(16 oz Four Pack)

    Slater is our year-round West Coast-style IPA. He’s initially named after Surf-Royalty, Kelly Slater. However, many think it is named after ‘Saved by the Bell’ hunk, AC Slater, played by Mario Lopez. Either cool guy works for me. These guys are strong, talented, and likeable, just like this IPA.

    Slush Buddies(16 oz Four Pack)

    Slush Buddies is our collaboration with our crosstown friends, Zilker Brewing. Being the only 2 breweries in Austin who have ventured into hard seltzer territory, it was only fitting for us to join forces and create something new and fun at both breweries. St Elmo’s Slush Buddies is a Fruit Punch kiss on the cheek. Yes, we know…it’s easy to hate on hard seltzer. But we all need an excuse to have some fun these days. Enter: Slush Buddies.

    Vaughn(16 oz Four Pack)

    Vaughn is our German Pilsner. Assertively bitter, hop-forward and CRISP. Vaughn is a loose tip of the sombrero to Stevie Ray, who spelled his name differently, but whatever, who cares, we do our own thing here. Vaughn is also named after the legendary babe, Veronica Vaughn. Vaughn is not a perfect representation of what a ‘German Pilsner’ is like from Germany, but he is a damn good model for how German Pils tastes in Texas. He’s a Texas German Pils
